Lentil Sloppy Joes

Lentils are a favorite of mine. They require no pre-soaking, are quick to cook, extremely versatile, highly nutritious, and best of all very tasty! I have tried lots of sloppy joe recipes from the web and various cookbooks, but none tasted the way I envisioned. So I came up with this and finally I am satisfied. Hope you like them.

Lentil Sloppy Joes
In a large pan combine:
1 c. lentils
4 c. water
1 red onion, diced
2 cloves garlic, minced
1 carrot, diced
1 green pepper, diced
1/2 red pepper, diced
1 bay leaf
Simmer 20 min. till tender, drain, remove bay leaf. Stir in:
6 oz. can tomato paste
8 oz. can tomato sauce
2 1/2 T. chili powder
1 tsp. oregano
1 tsp. sea salt
1/2 tsp. paprika
1/2 tsp. sugar
1 T. prepared mustard(can use yellow or spicy brown)
1/4 tsp. apple cider vinegar
Heat through and serve on whole wheat rolls.

This is making me drool. I love to look at your journey, but 90% of the time I can't make things because
a) no oven
b) I live in a country where the ingredients are not readily available

Lentil beans will be kind of hard to find, and so will apple vinegar, but I think I know of a place I can get them.

Looks great! Lentils are one of my favorites, I just picked up some black beluga lentils, I've never seen these before...they are the tiniest little things.

Looks wonderful! I make a similar version in the crockpot, but I'm going to have to try this one; seems like it's more tomato-ey.

This is a great recipe! I added more paprika and less mustard. Now I have a ton of leftovers! Thanks!

glad I am not the only one that uses lentils for sloppy joes.. my friends turn their noses.. they don't know what they are missing! I call mine "sloppy lennys" though ;) (my hubby came up with it because he thought it was cute) I usually cook my lentils in my rice cooker (cuz i can just let it go on its own.. I also like to make lentil burritos or tacos using the same idea but with taco seasonings... mmmmmmmm love lentils!

This recipe is amazing! I served it on some gluten free toast and it was just fantastic! I've found a new go-to dinner!

super yummy, but way too spicy for kids! and i even put only 1 tea of chili powder.
