Pomelo and Avacado Salad

Pomelo are the largest fruit in the citrus family. They are believed to be the parent of the grapefruit. This was the first time I've had one and I was pleasantly surprised at its sweetness. I was also surprised at the 2-3" thick peel. It looked like a large green grapefruit, but after I peeled it the fruit inside was only the size of an orange. The membranes surrounding the segments need to be peeled because they are extremely tough and bitter. The fruit is jam-packed with vitamin c.

If you take drugs you need to check with your doctor or pharmacist before eating pomelo or grapefruit. It can interfere with the metabolism of drugs, which can cause extremely high levels of drugs in your blood and potentially cause serious side effects.

I love combining fruit and veggies in lots of my salads and this one is no exception. It is the best salad I've made in a while, definitely a keeper.

Pomelo and Avacado Salad

In large bowl combine:

1 avacado, peeled and sliced
1 pomelo, peeled and separated into segments
1 T. diced red onion
Large handful baby spinach
small head of red leaf lettuce, chopped

In small bowl mix dressing:
1 tsp. olive oil
1 tsp. balsamic vinegar
1 tsp. spicy brown mustard or dijon mustard

Drizzle dressing over salad, toss to combine, enjoy. Serves 1 if you like a big salad like I do, or 2 if you prefer a smaller salad.

Just got back from Thailand and there were Pomelos everywhere. They'd be so great in this salad, but I'm a huge grapefruit fan too.

Lori, you do so many interesting things, I loved your day with the elephant.

Janet,

I love pomelos too. I first had them in Italy. Sadly they are off the list now due to drug interactions. Maybe when I am out the lunch the next time without the hubby I can grab a salad with pomelo just for me.

Your salad reminds me very much of one I used to make. If you like olives they are classic in the Italian version of this salad (which doesn't include avocado).
