Mexican Pizza



Yesterday was one of those days. Everything I touched seemed to go wrong. As I was filling a bucket of water to wash the floor, I lost control of the laundry tub hose and completely drenched myself and the whole laundry room. After washing the floor and cleaning the kitchen, I spilled ground flaxseed everywhere and had to rewash the floor. And the day just went downhill after that.


Oscar broke an ornament on the Christmas tree in his frenzy to chase the mail carrier away by barking in the window. So I had to re-vacuum the living room. Here's the guilty party-




It's pretty hard to stay mad at him when he looks at you with those big eyes.





It was a day that I knew would be short on time, and my daughter's orchestra was giving their Christmas concert last night. So I decided to make pizza for a quick easy dinner. It was on my list of things to make this week anyway. Earlier this week I overbought avocados, and now they were getting overripe, so I was also looking for a way to use them up. So I came up with this simple Mexican Pizza. Not really a recipe, just a guide. In spite of the day I was having, the pizza came out very tasty. It was a nice variation from the regular veggie pizza I make. Here's what I did.

Mexican Pizza

whole wheat/flax pizza dough , or pizza dough of your choice
1 can  organic refried black beans
salsa
lettuce, chopped
tomato, sliced
onion, diced
peppers ( sweet and hot), diced
cheese (optional)
avocados, sliced

Spread black refried beans over pizza dough, top with lettuce, sliced tomato, onion and peppers. Spoon salsa over all of this, top with cheese if using. Bake 450 about 20 min. Top with sliced avocado and enjoy.

I'm afraid what will happen when the tree arrives - Pippin is one-year, exuberent and I am thinking I need to cat-proof the tree. And our dog Sadie is blind and may just walk into it. (Don't rearrange furniture with a blind dog!) So I could only smile with all your mishaps knowing it's coming my way. My family adores a good Mexican pizza and this would fit the bill nicely. Quick, easy and tasty!

I make pizza on days when I am short of time, or inspiration too.

Sounds like you had one of those days when it might have been easier to go back to bed. Oscar is darn cute though. No one could stay mad at that sweet face.

Great looking pizza. Wishing I had some to take bowling with us tonight for dh's office party. =) (I hear they are serving conventional pizza.)

Sorry you had a rough day. Hopefully, today will be much much better.

This year our pup hasn't messed with the tree, thankfully. He's small enough to sit under it, but only did so the first day it was up. =)

Claudia, I am glad your adorable cat is doing better. I'll remember the tip about rearranging the furniture, our other dog will be 14 this month and is beginning to get cataracts. It's amazing what we go through for our pets, isn't it.

Alicia, yes, it might have been better to go back to bed!
