Red Lentil Soup
I could eat soup everyday. It's quite possibly the perfect food. It can be made raw or cooked, from beans, lentils, veggies or fruits. The possibilities are endless. Lentil soup is one of my favorites, and even that has many varieties. There are brown lentils, french green lentils and these lovely red lentils.
Unfortunately they lose their lovely color when cooked, but they taste wonderful. Red lentils also lose their shape when cooked, taking on a thick, creamy consistancy similar to pea soup. Lentils are the convenience food of the legume family, requiring no presoaking. Which makes them perfect for a spur of the moment soup.
Soup is one of the most fun things to cook because it is so forgiving. You can add things, substitute ingredients, totally change the recipe from one time to the next and it is still always tasty. It's hard to mess up soup. And it never gets boring.
Here's my current red lentil soup recipe. What's your favorite soup?
Red Lentil Soup
1 onion, diced
2 carrots, diced
2 cloves garlic, minced
2 c. red lentils
3 T. brown rice
2 bay leaves
1/2 tsp. sea salt
1/2 tsp. oregano
1/4 tsp. pepper
1 qt. vegetable broth
2 c. water
Place all ingredients in large pot, simmer covered 1 hr. till thick and creamy. Serve sprinkled with freshly ground black pepper.

Asking my favorite soup at this exact moment is making me feel like you are asking me who is my favorite child (well I don't have children yet, but that is what it feels like) ;) So many yummy soups to choose from these days. This year I discovered not-chick'n bouillon, so I've been making tons of mock chicken noodle soup loaded with veggies lately, and also Italian inspired soups. As for more specific recipes I'm in love with Silkly Red Lentil and Sweet Potato Soup and Mexi-Meatlessball Soup which I've posted about. I'm certain that I'd love this soup too.
Ordinary Vegetarian, I know what you mean, there are so many great soups that it's hard to pick a favorite! I saw your Mexican Meatlessball soup, it looked great.

Choosing a favorite soup is a little difficult. I make a Moroccan Chickpea Stew with Preserved Lemons that I love. I guess that is my all time favorite. It is one of the few recipes I will repeat.
We also love red lentil and tomato soup.

Alicia, that Morroccan chickpea stew sounds wonderful, I love pretty much anything that has garbanzo beans in it!
I have soup for breakfast. I am a true soup-o-holic and love them all. The red lentil is singing to me right now as the winds howl.
I absolutely love red lentils. My fav red lentil soup is spiced up with jalapeno peppers and lemon juice. =)

Your soup looks and sounds absolutely delicious! I love any kind of soup and I can eat it everyday too. I can't decide which one is my favorite because I love them all. I made red lentil soup last month, I found the recipe from Oprah magazine, I loved it so much but I forgot to post about it. Your recipe sounds interesting, I love that you add brown rice in your soup. My hubby and my son don't like brown rice, I think it's great way to make them eat brown rice by hiding it in this yummy soup, YUM!

Fayinagirl, one of the things I love about lentils is that there are so many ways to spice them up. Jalapeno and lemon sounds good. I have been on a bay leaf kick this week, when the weather gets really cold they are my comfort herb.
Oraphan, I agree with you, I love them all too! I hate to admit it, but I am guilty of hiding healthy ingredients in recipes to get my hubby to eat them as well;)
This looks wonderful - I don't even mind that they lose their colour when cooked. My favourite soup - ummmm - that's "too hard"!
I just 'discovered' your site and absolutely love it! I am a soup lover too! Reading the comments and I had to comment on the 'brown rice' comment - I have converted my family (including 2 young children) by using SHORT GRAIN BROWN RICE - takes the same amount of time to cook, but it is 'softer', shorter and more to their liking than regular long grain brown rice... Hope this suggestion may help some...
