Beet Smoothie
When my brother told me the other day that he's been putting beets in his smoothies, I knew I would have to try it. I love adding beet greens to smoothies, but for some reason it never occurred to me to also add the actual beets. I love beets, but sadly my children did not inherit that taste from me. So adding them to smoothies is a great way to add this powerhouse to their diets. Beets are loaded with folate and manganese as well as fiber and vitamin c. Beets are anti-inflammatory and anti-cancer. The betacyanin which gives them their color is a cancer fighting agent. They also make the smoothies an amazing color.
Beets and dandelions are great for the liver and help to flush out toxins, so I combined them in this smoothie along with some fruit to add more vitamins and antioxidants and to make it a healthy yet tasty treat for the kids. I really liked this smoothie and could have drank it all myself! I like my smoothies thick- like a milkshake, if you like yours thinner just add a little water.
Beet Smoothie
large handfull baby spinach
large handfull dandelion greens
large handfull red grapes
2 bananas
2 oranges, peeled
1 c. pineapple cubes
1 beet, peeled
6 ice cubes
Place everything in blender and blend till smooth. Enjoy!

Wow, Janet! Your beet smoothie looks so amazing! Your recipe sounds very interesting, I'd love to give it try. I'm just wondering where I can get dandelion greens, I've never seen them at my local grocery stores before.
It looks beautiful and I am not a beet person - but thinking this could be a grand pick-me-up so will try it. I do not serve beets often enough.

Oraphan, if you have a Meijers store near you they usually sell fresh dandelion greens, and my local health food store often has them too. I think I've also seen them at Whole Foods. In the spring I use the ones growing in my yard.
I love beets, but for those of you who don't like beets, the reason I came up with this was to get my kids to consume beets, the banana and pineapple mask the beet flavor.

So, I stumbled onto your blog researching Vega supplements, as a long-time vegetarian hoping to become a vegan. I've long made smoothies (usually with flax powder, fruit juice, and fruits) but I cannot for the life of me figure out how to incorporate vegetables. It always ends horrifically, like the time I tried carrots. BUT I love pre-made carrot-orange juice, so I started using carrot juice. I'd prefer to stick to whole foods but I just can't figure out how to make it taste right -- food process the veggies first? Puree the heck out of them?
Anonymous, is the problem the texture of your smoothies or the flavor? I use a powerful Vita-mix blender to make mine and it pulverizes everything to give a smooth texture. If it is the flavor, just try adding a small amount of veggies to your fruit smoothies at first, and as you adjust to the taste you can add a bit more each time. I started out with just a small amount of spinach or a leaf of kale at first, and worked up to a whole bunch of kale, carrots, cucumber, beets,etc. as my taste buds adjusted.But in the beginning my smoothies were mostly fruit since they masked the flavor of the veggies.
