Five Minute Fruit Salad





I have mentioned before that my oldest son has had cancer and is mentally impaired. He goes to a special school, where they teach daily living skills and some vocational skills.  Today was their spring craft sale, where they sell items made by the students, plants grown by the students in their greenhouse, and foods prepared by the students. The money they make from the sale goes back into the program. These young adults put their heart and soul into all that they do, so no one has to pull my leg to get me to support them.  I bought a lovely little sage plant, some decorated tile coasters, and imagine my delight to find they were selling vegetarian foods. I bought the spinach and mushroom quiche above, not something I would normally eat, but I had to support the program, especially since they had only meatless items! So I get a break from cooking today. This will be dinner, along with a nice big green salad and a luscious fruit salad for dessert.





I put this fruit salad together in about five minutes, it doesn't really require a recipe. Fruit is probably my favorite thing to eat for dessert. Organic fresh strawberries don't show up around here often, and they are in now, so I have to eat my fill ;-) 

                                                     Five Minute Fruit Salad

2 golden delicious apples, diced
1 qt. strawberries, tops removed and cut in half
2 pts. blackberries
juice of 1 lemon
1 T. honey, or sweetener of choice

Combine apples with 1/2 of the lemon juice, toss to coat and let sit while you get everything else ready.(This will prevent the apples from browning.) Mix remaining lemon juice with honey or sweetener of choice. Mix the rest of the fruit in with the apples, pour sweetened lemon juice over and toss to coat. Chill.

I could eat fruit salad everyday. It is my favorite way to have fruit.

Only meatless items, good for them. I love that part. Enjoy the quiche.

Alicia, with what passes for food at most of our schools now, I was so excited to see meatless items! It's a step in the right direction:)

I was excited to read that you came back with some meatless food, and none of these were sweet things like cakes and bakes. Brilliant.
Thank you for sharing more with us about you.

I had forgotten about the kale flowers, thank you for reminding me. I remember the buzzy bees loved them. Good idea to let them flower for both colour and for the amusing wildlife.

Mangocheeks, I have a lot of things blooming, but the only thing that has really attracted the bees is the kale. Plus it's just so pretty:)
