Pasta with Pesto and Veggies



I had a busy and productive weekend, but not a lot of time for cooking.  On Saturday I went to a quilt show at a local church, this was the first show I've been to in years. I tend to be very shy, but was made to feel so welcome, I never even thought about it.  I really enjoyed it, I had forgotten how much fun crafty people are! There were some amazing quilts on display, now the wheels are turning in my head, lots of ideas are playing around there.  I am also considering starting a craft blog when time allows. After the show I came home inspired to work for a few hours on a quilt that's been half done for a few years. Now it's three quarters done ;)
For dinner I threw together a quick meal of pasta and veggies, so I could hurry up and get back to work.

I served it with some roasted garlic and asparagus. I have been eating so much raw food lately that I was really craving a cooked meal.






Pasta With Pesto And Veggies

1 lb. pea pods
1 red pepper, sliced
1/4 of a red onion, diced
1 clove garlic, minced
2 tomatoes, chopped
few tablespoons water or veggie broth
1 lb.whole wheat rotini, cooked and drained
 8 oz. homemade or your favorite pesto

Cook pasta and drain.
While pasta is cooking, stir fry pea pods, pepper, onion and garlic in a little water or veggie broth  4-5 min. till crisp tender. Add tomatoes and cook a minute or two longer. Toss veggies with pasta and pesto.

This goes well with salad, but I needed a break from all the salads I've been eating, so I roasted some asparagus to go with it.

I love this mixture and always change the vegetables with the seasons. Loving the peapods in it. That's up next. My aunt and cousin are quilters and donate hundreds to children in the hospital. I wish I had the patience.

Claudia, I love pea pods too. I'm growing some, but it will be a few more weeks till they're ready. That is fabulous that your aunt and cousin donate quilts to kids in the hospital!! I wish I was faster at it, maybe someday I'll be able to do that too.

That looks so yummy. I need to get our basil started so we can start making pesto again.

Kateri, thanks. There's nothing like fresh basil, is there? I started some, but it will be a while until it's big enough to use.
