Rain Barrels and Raw Snowball Cookies


A local environmental group partnered with a nearby community to host a truckload sale of rain barrels this weekend. I have longed for these for a while, and I was very excited to get two. So hubby and I spent this morning getting them set up. Just as we were finishing, we heard loud thunder. A short downpour filled one completely. The hubs then realized that the second, overflow barrel is not filling because it sits level with the first. So we need to dig out the base of the overflow barrel to lower it a few inches. I am so happy with these, they have screens to keep mosquitoes and debris out of the water, and spigots on the bottom that you can attach a hose to or use to fill a watering can. I am in love! It's funny, my eyes glaze over when women talk about their new shoes or jewelry, I have no interest in that stuff, but some rain barrels, now you're talking! ;-)

Now onto the food. On Saturday my mom's side of the family had a reunion of sorts, a big potluck picnic. It was wonderful to catch up with relatives I hadn't seen in over twenty years. It's funny, no matter how many years pass, nothing changes family. Everyone's different, and everyone belongs.  Everyone was to bring a dish to share.

Since I know that our eating habits are not like the rest of the family, I just brought food for us. We ate our veggie subs, fruit salad and raw cookies, while the rest of the fam ate burgers, hot dogs, chips, cake, cheesecake, pop, etc. and everything worked out smoothly. Here are the raw cookies I made.

                                
                                                          Raw Snowball Cookies

1 1/4 c. raw walnuts
1/4 c. raw brazil nuts
12-15 raw medjool dates, pitted
1/3 c. raw cacao
about 1/4 c. raw unsweetened shredded coconut

In food processor grind nuts till fine, add dates and process till dates and nuts begin to blend, then add cacao and process till mixture is nearly smooth. Form into 1 inch balls, roll in raw coconut. Chill till ready to eat.

These are a delicious cool treat on a hot day, enjoy!

Alicia, thanks! I really do love my rain barrels:) I think one of the reasons I love summer so much is that I hate shoes. I prefer to be barefoot as much as possible. I even run on our treadmill barefoot;)

Congrats on the rain barrels. They are grand in a drought actually. Rain gardens are the rage here and they help with water run-off. Our town is trying to divert water to the lake which is down five feet. And the cookies just look spectacular - brimming with goodness.

Claudia, rain gardens are on the rise here as well. And nearly every summer since we've been here there have been long periods where the rain just skirts around us and everything turns brown. Now that I have rain barrels, this summer we are getting lots of rain!

I know how it is to get together with extended family, besides my parents. It's so great your kids like raw cookies. That's something I'll have to conquer.

Rain barrels are such a wonderful idea. The cookies look so yummy! Now where is my dessert maker...oh, that's right...she's off making a quilt with a friend. Rats! Guess I'll have to hit the kitchen alone. ;-)
