Simple Food Friday


 To start; romaine, avocado and blood orange salad with the organic orange zest sprinkled on top. Need I say more?


Next, butternut soup. Simply Yum.


    Butternut Soup


1- 12 oz. box frozen cooked winter squash
1 red onion, diced
1 clove garlic, minced
1 bay leaf
1 qt. vegetable broth
14 oz. coconut milk
1 c. cooked brown rice

Place broth, onion, garlic, bay leaf, and frozen squash in pot, bring to boil, simmer 10-15 min. till onion is soft. Stir in rice and coconut milk, heat through and serve. I served mine with a sprinkle of dulse on top.

The salad is really healthy because it's more on fruits and veggies! Love it! The butternut soup looks good, I have to try it! Thanks for posting.
